Ink should be kept at room temp. away from direct sunlight in a tightly sealed bottle made for ink (I’m assuming we’re talking standard India Ink here).
As for cleaning the nibs it depends.
I found the best way to get the gel-like ink that sticks on after a long session of writing is to spray it with hair spray (hold the bottle really close to the nib to avoid a mess). Other ideas are acetone, isopropyl alcohol, or hydrogen peroxide even. You have to be tough on it to keep ink from accumulating.
If you’re using expensive nibs then I would suggest buying a cleaner made specifically for cleaning calligraphy pens as the cleaners I suggested are a bit corrosive.
As for leaving a bottle open, why would you want to? lol
I would always open my bottle only for dipping. I’d lay the cap on top of it whenever I wasn’t using it for dipping. And always screw the lid on tight.
Also, hairspray also works great for getting stains out of carpet or solid surfaces. You just have to clean up with something else afterward to get rid of the stickiness
